Great Recipes for Christmas

These are a family favorite since 1994.

Chocolate Pancakes

1 1/2 cupsAll-purpose FlourSubstitute cake/break flour for more cake-like texture
1 teaspoonBaking Soda
1/2 teaspoonSalt
1/4 cupSugarSubstitute honey for a sweeter pancake, or maple syrup for fall flavor.
1/4 cupCocoaSubstitute baking chocolate with butter to have lighter pancake
2EggsLightly beaten
1 cupMilkSubstitute skim milk or soy milk may require adjustment of liquid/flour ration for proper mixture flow on griddle
1/4 cupButterSubstitute with margarine or vegetable oil will result in a smoother-texture pancake. Add vanilla for added flavor
1/2 cupMilk Chocolate Morsels
Fall mix with Dark-Chocolate and Butterscotch chips, for Christmas, use Christmas chips or M&M’s

Shift together the first five ingredients in a large bowl. Combine eggs and milk; add to flour mixture, sitting just until dry ingredients are moistened. Add melted butter and chocolate morsels, stirring just until combined.

For each pancake, pour about 2 tablespoons batter onto a hot, lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges look cooked. Yields: 18 (4-inc h) pancakes.

I use a cast-iron griddle on a gas range. I set the temperature so the pancakes cook enough in three minutes per side.

I use either the 1/4 cup or 1/2 cup to dispense the batter onto the griddle.

For Christmas I would substitute either Christmas Chips or M&M’s in the recipes.

Christmas-time Beer

For beer this year, I am trying the Old Fezziwig clone. I added extra Ginger and gave it a little-more kick. Over time the ginger will mellow, so after Christmas it should be a nice Winter beer.
